Raw Vegan Nutrient-Dense Recipes
Green Goddess Smoothie Bowl
High in: Vitamin C, Chlorophyll, Silica, Water | Bonus: Vitamin E
Ingredients:
2 cups fresh spinach
1 cup cucumber, chopped
1 ripe avocado (vitamin E powerhouse)
1 cup coconut water
1/2 cup fresh parsley
1 kiwi, peeled
1 tbsp hemp seeds
1 tsp spirulina powder
Juice of 1 lime
Toppings:
Sliced almonds
Sunflower seeds
Fresh berries
Instructions: Blend all ingredients until smooth. Pour into bowl and add toppings. The spinach and parsley provide chlorophyll and vitamin C, cucumber adds silica and water, while avocado delivers vitamin E.
Mineral-Rich Gazpacho
High in: Vitamin C, Silica, Water, Zinc
Ingredients:
4 large tomatoes, chopped
1 large cucumber, diced
1 red bell pepper, chopped
1/2 red onion, minced
2 cloves garlic, minced
1/4 cup fresh basil leaves
2 tbsp fresh cilantro
2 tbsp pumpkin seeds (zinc source)
2 tbsp olive oil
1 tbsp apple cider vinegar
Sea salt and pepper to taste
